How the Meaning and Meals of Thanksgiving Have Evolved Over the Years

As Thanksgiving approaches, those who celebrate the holiday are likely thinking about getting everything prepared for a big meal with friends and/or family. Rooted in a 17th-century gathering between Pilgrims and Native Americans, the origins of Thanksgiving has often been critiqued for white-washing the brutual history of colonization that was carried out against Native Americans. However, the modern Thanksgiving table has evolved far beyond its historical beginnings.


This American tradition, based on a meal that originally took place in the 17th century, has always involved Turkey as the typical centerpiece. While turkey remains, family favorites like pumpkin pie and jellied cranberry sauce were absent from early Thanksgiving meals. During Pilgrim times, sugar was scarce, making it unlikely that sweet desserts or sauces were served. However, native ingredients like pumpkins and cranberries may have appeared in more savory forms, highlighting the New England's food.


In the 20th century, popularity of French cuisine and the availability of technology and other luxuries like sugar gave way to dishes closer to what we know at our modern Thanksgiving tables. Readily available sugar and access to new cooking methods helped shape the menus we know today.
